WHOLE GRILLED SALMON

Cooking time: 30-35 minutes | Servings: 4

Fish on the bone is very rewarding to cook compared to the required effort. Especially after a long day of riding your bike.

Ingredients:

1 Side Salmon with skin
Olive oil
Salt & pepper
Tinfoil
SEASONING MIX
1 tbsp Fennel seeds
1 tbsp Coriander seeds
1 tbsp Mustard seeds

Instructions:

PREPERATION AT HOME
01 Prepare the spice mixture at home by toasting all the spices in a dry frying pan. Crush them in a mortar or mix in a spice grinder first.
02 Put the mixture in a jar to bring on your trip.
COOKING OUTSIDE
01 Put a piece of foil on the grill and drizzle with olive oil.
02 Place the side of salmon on the foil with its skin down.
03 Brush olive oil onto the meaty side. Season with salt, black pepper and the spice mixture.
04 Grill the salmon over the coals (do not let it burn) for 25 to 30 minutes.
05 It's a good idea for the salmon to be cooked medium (a bit soft inside) when you take it off the grill.
06 Serve with freshly boiled potatoes and a salad.
