BUTTER BEAN CASSEROLE WITH RICE

This hearty and delicious butter bean stew is a perfect treat for an evening meal on a multi-day trek. This recipe is based on pantry items that hold up as well in your backpack as they do on the store shelf.

Ingredients:

2 x 400 g butter beans
4 dl jasmine rice
2 x 400 g crushed tomatoes
8 dl water
2 vegetable stock cubes
Salt & pepper
2 tsp chili powder
2 tsp thyme
2 tsp dried basil

Instructions:

COOKING OUTSIDE
01 Heat up water.
02 Add all the ingredients and cook until the rice becomes soft. If more water is needed, add a little at a time.
