CHICKEN STEW WITH WHITE BEANS

Cooking time: 20-25 minutes | Servings: 4

Warming, salty, comforting and filling. What more do you need from an outdoor meal?

Ingredients:

600 g Chicken thighs
2 Onions
4 Carrots
2 Garlic cloves
200 g Scaly wood mushrooms
300 g Canned white beans
2 tbsp Tomato purée
600 ml Crème fraiche
600 ml Water
Olive oil for frying
Salt & pepper
Topping
4 tbsp Shredded spring onion
2 tbsp Chopped parsley

Instructions:

COOKING OUTSIDE
01 Peel and dice the onions and carrots.
02 Finely grate the garlic.
03 Cut the mushrooms into wedges.
04 Shred and sauté the chicken, onions, carrots, garlic and mushrooms in olive oil in a frying pan.
05 Add the tomato purée, crème fraîche and water. Add the beans. Boil for 10-15 minutes.
06 Add salt and black pepper to taste.
07 Top with spring onions and parsley.
