Creamy instant noodles with poached egg

Super simple but luxurious ramen dish made with cheap noodles. A few well-chosen ingredients will elevate your instant noodles into a very enjoyable meal that’s as easy to prepare as it is delicious to eat. It’s just as easy to boil the egg before you leave home as it is to poach it in the pot.

Ingredients:
4 spring onions
4 garlic cloves
4 tbsp tomato purée
1600 ml water
4 pack instant noodles
2 red chili
1 tbsp mayonnaise
4 eggs
Oil for frying
Salt
Instructions:

Cut the onion, chop the white part and fry in oil together with half the chilli and the garlic until the onion starts to turn shiny.

Add the tomato puree and fry for a few more minutes.

Add water and bring to the boil, season with salt.

Add the noodles.

When the noodles are soft, crack an egg straight into the pan and turn off the heat.

The soup is ready when the egg has set.

Pour the soup into a bowl and garnish with the green onion and the rest of the chopped chilli.

Enjoy with a dollop of mayonnaise.
