SPICY SWEET POTATO AND CARROT SOUP

This creamy vegetable soup will make you feel at home in the backcountry. Plus it’s easy to make, quick to heat, and delicious to eat!

SPICY SWEET POTATO AND CARROT SOUP | Trekking & Expedition

Ingredients:

1 sweet potato
4 carrots
2 garlic cloves
4 dl whipping cream
4 dl water
0.5 onion
Salt & pepper
2 tbsp butter
2 tsp chili powder
2 tsp garlic salt
2 tsp paprika powder
Tabasco
2 tsp chili toasted sesame seeds
4 tsp roasted onions
1 tsp dried parsley

Instructions:

PREPARE AT HOME
01 Cut all the vegetables into small pieces and sauté them in butter.
02 Add all the spices except for parsley, sesame seeds, and fried onions.
03 Pour in the cream and fill with water until everything is covered. Cook until the sweet potatoes are tender.
04 Blend the soup until smooth. Pack the soup.
COOK OUTSIDE
01 Heat the soup. Add water if needed.
02 Top with fried onions, dried parsley, and sesame seeds.
