Sunflower Seed Carbonara

There are many rules for what a real pasta carbonara should look like. This creamy sunflower seed pasta breaks them all. The fattiness from the creamy sauce goes perfect with the salty pork while the kale provides a nice balance. Tastes better when surrounded by a spruce forest.

Ingredients:
200 g dried spagetti
1 chopped garlic clove
150 g roughly cut green kale
100 g diced pancetta
Olive oil
Salt & pepper
SAUCE
50 g toasted sunflower seeds
100 ml cream
Instructions:
PREPARE AT HOME

Prepare the sauce by heating the milk/cream in a pot wile toasting the sunflower seeds in a pan, then mix in a blender. Pour it into an airtight jar.

Dice the pork, chop the garlic, and roughly cut the kale. Combine in a container.
COOK OUTSIDE

Sweat the kale, pork, and garlic with the olive oil in a saucepan until soft. Season with salt & pepper.

Meanwhile, boil the pasta in salted water until al dente.

Combine the pasta, kale, pork, garlic, and sauce in the saucepan.

Serve with some grated Parmigiana on top.
