VODKA PASTA

Cooking time: 20 minutes | Servings: 4

A fantastic, easy-to-make pasta. Don’t be frightened by the vodka – combined with the tomato purée, it provides wonderful warmth, flavor and richness to the dish.

Ingredients:

400 g penne pasta
1200 ml water for boiling
2 tbsp olive oil
2 onions
4 garlic cloves
100 ml tomato purée
4 tbsp vodka
200 ml oat cream
2 tsp white wine vinegar
2 tbsp butter
To taste Salt & pepper

Instructions:

COOK OUTSIDE
01 Boil the pasta in salted water according to the package. When the pasta is al dente, save a cup of pasta water for the sauce.
02 Finely slice garlic and dice the onion. Soften gently with olive oil in a pan until the onion becomes translucent.
03 Add tomato purée and fry gently for 10 minutes, until the purée becomes bronze colored.
04 Remove from heat and pour in the vodka. Stir thorougly.
05 Put back on the stove and let the sauce simmer for a while.
06 Add the oat cream and season with vinegar and salt. Bring to a boil.
07 Combine the sauce with the pasta and the pasta water you saved earlier. Add the butter and parmesan while stirring. Finish with fresh basil and more parmesan.
