One-Pot Veggie Lasagna

A flavourful one-pot lasagna packed with green lentils, herbs, and a creamy layer of melted cheese. This veggie-friendly favourite is easy to cook in just one pan – perfect for a hearty outdoor meal. Just sauté, simmer, top – and enjoy!

Ingredients:

4 lasagna sheets
1 tbsp tomato paste
1 yellow onion
230 g green lentils
390 g tomato sauce with basil
2 slices cheddar cheese
250 ml cooking cream
Oregano, rosemary, thyme & black pepper
1 vegetable stock cube
Oil for frying
Fresh basil for topping (optional)

Instructions:

01 Finely chop the onion and sauté in oil.
02 Add tomato paste and let it cook briefly.
03 Pour in tomato sauce, cream, and lentils. Let it simmer.
04 Season with herbs and the stock cube.
05 Break the lasagna sheets into pieces and cook until soft, about 15–20 minutes.
06 Top with cheese and cover to melt.
07 Sprinkle with fresh basil before serving.
