SAFFRON PASTA WITH SHRIMPS

Saffron is so much more than just a spice for Christmas baking. Here we use it together with chilli & prawns. MAGICALLY

Ingredients:

400 g Dried spaghetti
6 Cloves chopped garlic
1 Onion
2 tsp Saffron paste
240 g Shrimps
1 Red chili
4 Tomatoes
10 Cocktail tomatoes
6 dl Whipping cream
4 tbsp White wine
Oil for frying
Salt & pepper
Pea shoots

Instructions:

PREPARE AT HOME
01 Peel your prawns (save a few for garnish)
02 Cook your pasta al dente & cool down
03 Cut the tomato and cocktail tomatoes into rough pieces
04 Slice the garlic, onion & chilli
05 Pack everything and head out
COOK OUTSIDE
01 Heat oil in a frying pan
02 In with all the vegetables (save some sliced ​​chili for garnish)
03 Brown together with 1 teaspoon of saffron paste
04 When the onion turns golden. Add a splash of white wine & the cream, season with salt & pepper
05 Let the sauce reduce slightly so it becomes a little creamier. Turn the pasta over, divide between you and top the pasta with the peeled prawns, some chilli & pea shoots!
